Did I Say I Liked Bruschetta?

Um, I mentioned in my last post that I'm in love with bruschetta, right?
Well, this dish helped solidify that love.
It was so good, so very good.  My roommate had to ask me to stop talking about it.
Golly, it was good!
And it was easy. And it warmed up really well. And it's something you should make right now.
What you'll need*:
4 thin chicken breasts
1/2 cup flour
1/2 cup bread crumbs
1 egg
1/4 cup shredded parmesan or mozzarella
salt and pepper to taste

How you do it:
Preheat the oven to 375.
Put the flour, bread crumbs and egg into separate bowls. Season each chicken breast with the salt and pepper.  Dip each breast into the flour, then the egg and then into the bread crumbs. I placed them on a tinfoil lined pan, for easy cleaning.  Add cheese to the top of the chicken breasts.  Cover pan in tinfoil and cook for 20 minutes.  Uncover and add the bruschetta. Cook for an additional 3-5 minutes.

Serve it up with a yummy salad and fresh bread!

Garlic Bread Brings Happiness

Do other people consider garlic a comfort food?  I mean, not on it's own, but accompanied by something else?  Like, say for example, bread?
Because when I smell garlic it brings so many wonderful, savory memories to mind.
Like my dad's pasta sauce.
Like my mom roasting it in the oven.
Like warm garlic bread to mop up pasta sauce.
Or is it just me? Either way, garlic bread makes me happy.
What food makes you happy?

Sunday French Toast

I know my parents probably, at some point, maybe, made me French Toast.
But I don't remember it.  Nope, the first memory I have of French Toast was with my G-ma Allred.  I remember thinking it was weird that she was putting bread into a bowl of eggs.  I think that's what I remember most.  That putting bread into raw eggs was weird.
Weird, it may have been; but delicious did it taste.  The final result was pretty much amazing.
I still think of it every time I make it.
So Mom and Dad, if you made me French Toast before Grandma, and I just don't remember...I'm sorry.
I found this recipe in my Betty Crocker cookbook.  I altered it slightly.

What you'll need:
1 large egg
1/4 cup milk
1 tablespoon sugar
1 teaspoon vanilla
pinch of salt
4 slices of bread
vegetable oil

Suggested:
maple syrup
powdered sugar

How you do it:
In a medium bowl, beat first five ingredients until well mixed.
Heat skillet over medium heat.  Add a little bit of vegetable oil to the pan.
Dip each side of the bread into the egg mixture.  Place slices flat on griddle, cook each side for about 4 minutes or until golden brown.
Serve on a pretty plate with maple syrup and powdered sugar.  And make sure to clean your plate!
